Green Teas
Green tea has been used as a health remedy for thousands of years, and is well-known today for its disease-fighting antioxidants. Its clean, earthy flavor is equally intriguing, making it a versatile base for additional ingredients.
II. Steeping
Heat and repeat
Start with one teaspoon of leaves per cup and add more for a stronger flavor. High quality green tea may be steeped multiple times at temperatures below boiling, but at shorter intervals, perhaps 30 seconds each.

Gaiwan guardian
Green tea should be handled delicately and protected from excessively high water temperatures. A Chinese lidded bowl called a gaiwan has been used for centuries for this purpose, absorbing heat so it does not damage the tea.

How It's Made
Green tea leaves receive very little processing, so they remain in their purest form possible. They’re steamed and rolled instead of withered, and receive little oxidization which helps them maintain their vibrant color.
